Administrative history
Instruction in dairy production was administered by a department known successively as Dairying (1921-1959) and Dairy Science (1959-1961). To reflect a widening of scope it was renamed the Department of Dairy and Food Science (1961) before changing its name to the Department of Food Science in 1964. The sole source of food science education in Alberta, the Department offered teaching, research, extension and professional activities related to food production, processing, and microbiology (PACCR, 1984). The Department of Dairy and Food Science offered courses on the topics of General Dairy and Food Science, Dairy and Food Processing, Dairy and Food Microbiology, as well as Dairy and Food Chemistry. In 1994, the department merged with the Departments of Animal Science and Plant Science to form the Department of Agricultural, Food and Nutritional Science.
